This One Pot Wonder of Sausages and Lentils is true home comfort food. So tasty, quick and easy in one pot. Such simple clean-up!
If you don’t like lentils you could replace with beans, Borlotti beans are awesome.
Great one to batch-cook and put in the fridge for lunches or dinners when you’re prepping like a legend!
This is a regular daily meal high in protein. For those days when you need some good energy from a solid bout of exercise you can add hard or toasted bread, rice or pasta as you prefer.
1 tbsp olive oil
1 lb (450g) pack of your favourite sausage
1 large onion, finely chopped
2 garlic cloves, finely chopped
1 red pepper, sliced
1 cups lentils (I use puy lentils)
1 cup vegetable stock
1 can of tomatoes
Salt and Pepper
2x fresh rosemary sprigs (or 1 tbsp dried)
Optional: 1 ½ cups spinach or diced carrots
1. Heat 1 tbsp oil in the pot, cook the sausages until browned, then put to the side. Meanwhile rinse lentils into a strainer or colander under running water.
2. Tip in remaining oil, onion, garlic and pepper (and carrots if using). Stir, cooking about 5 mins until softened.
3. Add lentils, rosemary, stock, tomatoes and sausages to the pan. Stir together.
4. Bring up to the boil, then reduce heat and cover to simmer for 20-30 mins (for puy lentils). Stirring until lentils are tender and no longer crunchy. Sausages should be cooked through. Taste and season with salt and pepper.
